Layered Lemon Dessert

Layered Lemon Dessert

This is, by far, my favorite dessert at harvest time. I first came across it from one of the nurses I worked with in the pediatric operating room. She was a wonderful baker and cook, and even did catering, I believe. At one of our many potlucks (nurses love potlucks!) she brought this and I had to have the recipe! The family all loves it and I am a sucker for anything lemon or citrusy so I had to share with you now!

Since this is a layered dessert, each layer requires different ingredients, but for the purposes of your shopping list, here is what you need for them all:
Layered Lemon Dessert
Ingredients
  • 1 cup butter or margarine + 2 tbsp separated
  • 2 cups flour
  • 1 cup chopped pecans
  • 2   8 oz. packages of cream cheese
  • 1 cup icing sugar + 2 tbsp separated
  • 3 cups whipping cream separated 
  • 2 packages lemon pie filling
  • 4 eggs
  • 2 lemons
  • 2 tbsp vanilla
  • Sliced almonds to garnish
And now the break down! But first, might as well preheat your oven to 350!

First Layer
  • Mix 1 cup butter, 2 cups flour, and 1 cup chopped pecans well with electric mixer 
  • Pat into greased 9x13 pan
  • Bake at 350 for 15 minutes

Second Layer
  • Beat both the cream cheeses and 1 cup of icing sugar together
  • Whip 1 cup of whipping cream
  • Mix whipping cream into cream cheese/sugar mixture (reeeeeeeally mix it up good!)
  • Spread over crust (easier if crust is cooled, even slightly)

Third Layer
  • Make the 2 lemon pie fillings according to package directions, but use whole eggs
  • Add zest and juice of 2 lemons
  • Cook and pour on top of cream cheese layer

Fourth Layer 
  • Combine remaining 2 cups whipping cream, 2 tbsp icing sugar, & 1 tbsp vanilla
  • Whip it, whip it good
  • Cover lemon layer
  • Garnish with sliced almonds!

Then you refrigerate it and EAT IT! It is divine I tells ya!

And for your ease of following the directions saving you scrolling up and down:

 First Layer

This seems like and odd time of year to post a recipe like this, but we've had such beautiful weather this year, I indulged in one of my favorite, most easy desserts to make early this year!

14 oz of condensed milk goes into the blender...

Next break off pieces of cream cheese, gradually add to blender and blend...

Add egg yolks and blend (so disappointed that 1 yolk broke!)

The best part - add the lime juice! I always opt for the higher volume of 5 oz vs the 4...

Blend until smooth!

What to do with the egg whites? I am not an egg-white omelet kind of girl, so I use a bit of the egg white, brush it on the prepared graham pie crust and bake for 5 minutes at 375 F.

Then pour mixture into the pie crust...

And bake for 10 minutes at 350 F. It might not look pretty, but it tastes DELICIOUS!

Y3W: Lemon Crinkle Cookies


Lemon Crinkle Cookies

I cannot take credit for this recipe. It's not an old family recipe, but I found it off Pinterest and couldn't resist sharing! It won the LDS Living cookie contest and is worth making, trust me!

Ingredients:
  • ½ cups butter, softened
  • 1 cup granulated sugar
  • ½ teaspoons vanilla extract
  • 1 whole egg
  • 1 teaspoon lemon zest
  • 1 Tablespoon fresh lemon juice
  • ¼ teaspoons salt
  • ¼ teaspoons baking powder
  • ⅛ teaspoons baking soda
  • 1-½ cup all-purpose flour
  • ½ cups powdered sugar
Directions:
  • Preheat oven to 350 degrees. 
  • Grease light colored baking sheets with non-stick cooking spray and set aside.
  • In a large bowl, cream butter and sugar together until light and fluffy. 
  • Whip in vanilla, egg, lemon zest, and juice. Scrape sides and mix again. 
  • Stir in all dry ingredients slowly until just combined, excluding the powdered sugar. Scrape sides of bowl and mix again briefly. 
  • Pour powdered sugar onto a large plate. 
  • Roll a heaping teaspoon of dough into a ball and roll in powdered sugar. Place on baking sheet and repeat with remaining dough.
  • Bake for 9-11 minutes or until bottoms begin to barely brown and cookies look matte {not melty or shiny}. 
  • Remove from oven and cool cookies about 3 minutes before transferring to cooling rack.
*If using a non-stick darker baking tray, reduce baking time by about 2 minutes. 

I doubled the recipe and still got about 3 dozen or so cookies. If you do double the recipe it works out to use the zest and juice of 1 medium lemon so it worked out perfectly!

Happy Halloween!

My heart is so happy, my heart is just beaming right now. Normally I would blog with the Toddle Along Tuesday ladies, but I have to skip out this week because this needs to be posted NOW! :) I have always loved Halloween. Jay and I met 7 years ago when we were out with separate friends for Halloween. I love dressing up, as you can see...

Now that we have Braden...oh my heart just melted today! He doesn't (obviously) 100% understand what Halloween is all about, but he was so excited to put on his Cookie Monster costume. He was even saying "Cookie Braden" today and he definitely knows what a cookie is! If I chose his costume based on what he likes most, he would be Thomas, of course, and he would make an adorable Bob too...but mama's choice was Cookie Monster because it suits his personality so much!

So Jay wasn't feeling that great so he decided to stay home and hand out the candy and cookies that I made, so I got to take the little dude around to the neighbors. I cannot stress enough how much being a rural family ROCKS at Halloween! We get to go see our family & neighbors, get homemade treats, full sized chocolate bars and chips! Plus on the chilly years we get to stay in the car or in the houses the majority of the time! We ran into Lukey at our 2nd last house!

Then as a treat, we let Braden stay up...and have a treat! Plus we want to keep him up late all week to train him for daylight savings time!

So I kind of did a reverse trick or treat for the neighbours. I really wanted to bring a treat related to his costume, and I've been wanting to make these ever since I saw a picture them! I made Cookie Monster Cupcakes!!

I apologize for the yucky pictures...Speedlite is needed I tells ya! I'm happy with the way they turned out and the neighbours loved them!!Then I also made some Halloween cupcakes for Serena's 6th birthday and also some Halloween sugar cookies! :)

My Token Pinterest Post

If you follow other blogs like I do, there's been a lot of buzz on Pinterest lately. What is Pinterest? Well they describe themselves as:
Pinterest is an online pinboard.
Organize and share things you love.
It's awesome. You can have an assortment of boards and "pin" anything and everything to them. I have baking, cooking, photography, Braden, funny boards...you name it! Well, I'd like to share with you some of my favorite pins...it has really inspired me to try new recipes and I will also be crafting a lot one day too, I hope!

Twice baked potatoe casserole. I made these as a side when I had my inlaws over...and they were a BIG hit! It's essentially like a baked potatoe in a casserole dish - devilishly good!

Baked spaghetti with cream cheese. This was supper last night and it was YUMMY! I will tweak it a bit next time I make it, but Jay said it's better than our "usual" spaghetti!


Chicken parmesan bake. Again, very yummy but I will tweak it next time to make it even better!


And some decorating! I did my version of this, this year.

So those are a few of my favorites. Jay even asked last night, "so...is this a recipe from Pin-something?" :) You know you've been Pinning too much when....! Pinterest is addicting, some may say it's a waste of time, but I LOVE it! They've got a great app for iPhone/iPods too!
